Sautéed Hunter Chicken: the best recipe

Ingredients (for 6 people):

  • 1 beautiful cut chicken (or only thighs depending on your preference)
  • 3 to 4 shallots, chopped
  • About 500 g button mushrooms, thinly sliced
  • 1 tablespoon of bound brown stock (poultry or veal) diluted in 20 cl of water
  • 50g butter
  • 1 teaspoon of tomato paste
  • Flour to brown the chicken
  • A drizzle of olive oil
  • Fresh chopped parsley
  • Salt, pepper to taste
  • Chopped chives or, for lovers, tarragon.
