Avocado stuffed with shrimp and apple

Cut the shrimp into small pieces.

Cut the pickles into small pieces.

Cut the apple into small pieces.

Remove the inside of the avocado without piercing the skin and cut the avocado flesh into small pieces.

Assembly:

In a large bowl, combine the shrimp, cilantro, pickles, apple pieces and avocado pieces.

Add a little lemon juice.

Add mayo, salt and pepper.

Divide among the avocado skins.
